Spicy Wilted Greens

This is a variation on the classic Collard Greens in Bacon Grease, but a bit healthier.

Start with a tablespoon or two of olive oil in a Wok. Add about 1/4-1/3 tsp of black pepper and 1/2-1 cracked chili pequin, and 1/2 chopped onion. Start to saute. Add about 4 cloves chopped garlic and saute until onions start to clear.

Add greens to mostly fill wok. Can be collards, but salad greens made from bitter green mix (dandilion, etc) also work very well.

If you have oil from oil-packed olives, reduce the initial oil a bit, and add the olive juice along with the greens. The olive packing-oil will not tolerate heat as well a pure olive oil.

Saute until greens wilt a bit and reduce in volume.

Salt to taste (or add bullion powder to desired saltiness) and serve hot.


Very quick and simple, and impressive green preparation!
